- 2 cups fresh pineapple, chopped
- 1 cup coconut milk
- 1 lime, juiced
- 2 tbsp pure maple syrup from Canada
- 1 tsp vanilla extract
- Add the pineapple, coconut milk, lime juice, maple syrup and vanilla extract to a blender and blend until smooth.
- Pour the mixture into a popsicle mould and add popsicle sticks to each popsicle.
- Place in the freezer overnight.
- To remove the popsicles from the moulds run them under warm water for 30 seconds, then gently tug the popsicle sticks.
