This is not only the case in great restaurants but in home kitchens as well. Maple has its place in comfort food as much as in refined cuisine. A flavour-enhancer par excellence, maple bears the distinct advantage of being a beneficial replacement for sugar and all other usual sweeteners in any recipe.
For most recipes, maple syrup can easily be used to replace an equal amount of sugar. To substitute for a cup of sugar, just reduce the quantity to 60 ml (¼ cup) of liquid in the recipe. If syrup is to be used to replace a liquid sweetener like honey or agave syrup, just keep the quantity the same.
