Maple Sugar Pork Tenderloin Bites With Cajun Spices

Ingredients

Cajun Spices with Maple Sugar

  • 2 tbsp store-bought Cajun seasoning
  • 2 tbsp store-bought Cajun seasoning

OR

House-Mix Cajun Spices with Maple Sugar

  • 2 tsp paprika
  • 1 tsp dry mustard
  • 1/2 tsp cayenne pepper
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/2 tsp dried thyme
  • 1/2 tsp ground cumin
  • 1/2 tsp salt
  • 1/2 tsp ground pepper
  • 1 tbsp maple sugar

Pork Tenderloin

  • 1 lb pork tenderloin (thick enough to be able fold thin slices of it)

Mayonnaise

  • 1/3 cup mayonnaise
  • 1 tbsp maple sugar
  • salt and ground pepper

Garnish

  • 1 green onion, finely sliced
  • 1/2 cup red cabbage, finely sliced

Method

Cajun Spices with Maple Sugar

  1. Blend store-bought or house-mix Cajun seasoning with the maple sugar.

Pork Tenderloin

  1. Preheat oven to 425° F.
  2. Using at least 2 tbsp of the Cajun spice-maple sugar mixture, coat the tenderloin generously. Save the rest for another recipe.
  3. Place the pork in an ovenproof dish and bake 25 minutes, turning it halfway through cooking time. Remove from oven and let cool to room temperature. Place in fridge for at least 2 hours.

Mayonnaise

  1. In a bowl, blend the mayonnaise and maple sugar. Salt and pepper to taste. Set aside.

Assembly

  1. Carve the tenderloin on the bias into about 24 thin slices.
  2. Lay slices onto work surface. Garnish each with maple mayonnaise, cabbage, and green onions.
  3. Fold in half (like you would a taco) and secure with toothpicks or other type of food pick. Serve chilled.
