Tomato and Watermelon Salad with Maple Dressing

  • 2 containers of cherry tomatoes on the vine, halved
  • 480 ml of watermelon, seeded and cut into cubes
  • 240 ml of pitted black olives, halved
  • 240 ml flat-leaf parsley, chopped
  • 2 garlic cloves, chopped
  • 240 ml feta cheese, diced
  • 30 ml cilantro, chopped
  • Juice and zest of a lemon
  • 60 ml maple syrup
  • 60 ml olive oil
  • Salt and pepper, to taste


In a large salad bowl, carefully combine all the ingredients.

All the best produce of summer combines in this delicious and refreshing salad. The salty feta and olives are complimented by the sweet watermelon and juicy tomatoes. And, the lemon, maple syrup and cilantro create a tangy and flavorful dressing which ties the whole dish together. Serve as a poolside snack or dish up at your next cookout or picnic!
