Maple Syrup and Rosemary Pork Loin

1/2 cup of pure maple syrup from Canada
1/3 cup of Dijon mustard
1 tablespoon of fresh rosemary, chopped
1 garlic clove, chopped
1 1/3 lb of pork loin
1/4 cup of bread crumbs

Sauce

1 shallot, chopped
2 teaspoons of butter
1/4 cup of white wine
1 cup of prepared demi-glaze sauce
2 tablespoons of Dijon mustard
1 to 2 tablespoons of pure maple syrup from Canada
1 teaspoon of rosemary, chopped
Salt and freshly ground pepper, to taste

Instructions

  1. In a small bowl, mix the maple syrup with the mustard, the rosemary, the garlic and season generously.
  2. Cover the pork loin with the mixture and sprinkle with bread crumbs.
  3. Sear in oven at 450 °F for 10 minutes. Lower the heat to 350 °F to finish cooking (about 20 min./lb).
  4. While the meat is cooking, cook the shallot and garlic in butter to prepare the sauce.
  5. Deglaze with white wine and reduce to one half.
  6. Add the demi-glaze sauce, the mustard, the syrup and the rosemary. Simmer for 5 to 6 minutes.
  7. Adjust the seasoning.
  8. Serve the roast sliced and topped with sauce. Accompany with your favorite season vegetables.
